Caramel frappuccino. Starbucks most iconic and popular cold beverage. But if you haven’t tried it, you might be wondering:
What exactly is a frappuccino?
A frappuccino is a coffee frappe – creamy, smooth and delicious! It is the perfect combination of bitter coffee, sweet coffee, ice and milk. All topped with whipped cream. No wonder then that this is one of Starbucks’ most popular drinks.

Why make frappuccino at home?
Frappuccinos, although delicious, are expensive. So, if you have a good blender at home, you can make them without breaking the bank.
What do you need to make a frappuccino.
Coffee
Starbucks’ Frappuccinos aren’t all made with espresso. Contrary to popular belief, there is only one frappuccino that is made with espresso, the others are made with what they call “Coffe Roast”. This is a type of instant coffee, diluted with water, to achieve a very concentrated flavour. To replicate this at home, just use instant coffee and a little water or simply make an espresso.
The Milk
As you will soon see, this drink has a LOT of ice in it. So to avoid ending up with a frappuccino that tastes like water, I recommend opting for whole milk. If you’re looking for a lactose-free option, you can opt for soy milk.

Caramel Sauce
For the best texture, I recommend using caramel sauce instead of syrup. If you prefer, you can buy it. Hershey’s is a pretty good option. That said, making it at home is VERY easy. So why not do it? Find the recipe below.
Xanthan Gum
Starbucks frappuccinos are made using a preparation consisting of syrup and xanthan gum. This frappuccino base is added to binds the coffee with the milk and ice, creating that characteristic frappuccino consistency and preventing the frappuccino from separating. Although this base is not available to buy, you can achieve the same effect by using xanthan gum powder mixed with a bit of water.
Is it safe?
Xanthan gum is a very popular food additive in gluten-free cooking. It is harmless and can be found in many food products, cosmetics, medicines, etc. If you want to get the smooth and creamy texture of the frappuccino, I recommend you not to omit the xanthan gum.

How to make Caramel Frappuccino (Starbucks)
Equipment
Ingredients
Caramel Sauce (250 ml)
- sugar 200 g
- water 80 ml
- cream 175 ml
- butter 30 g
Whipped Cream
- cream 80 ml
- caramel sauce - add more if you like it sweeter 1/2 tbsp.
Frappuccino (Grande)
- espresso 1,5 tbsp.
- xantan gum 1/4 tsp.
- milk 1/2 cup
- caramel sauce 3 tbsp.
- ice 1 cup
- water 1 tbps
Instructions
Caramel Sauce - Optional
- In a pot, add the sugar and the water. Stir
- Cook on medium heat without stiring until the caramel has an amber color.
- Turn the heat off, add the cream, this will bubble, so be careful. Mix well.
- Add the butter. Mix until combined.
Whipped Cream
- Add the caramel and the cream. Whip.
Frappuccino
- Mix the xantan gum and the water.
- Add the milk, the ice, the coffee, the xantan gum and the caramel in a blender.
- Blend. Add a little caramel sauce to a glass, pour the frappuccino and top with the whipped cream and the caramel.
